Wow, lots of Western tourists in Hoi An (note to self, 'Take off the bucket list'). Beer & rice-paper spring rolls is a nice way to spend lunch waiting for 'YOUR' driver to return.

Frame: 11.46… the nishikigoi are beautiful. Do you realize those aren't gold fish (that live only 10 years and get to 1 foot long) The Koi live upto 200 years and get in excess of 5 feet long. They are in the carp family. A grand champion in a show can bring $500,000. The breeders in Japan never sell the really good breeding stock. For the celebrations, (we call thanksgiving or Christmas) they don't eat turkey… They pack the largest, most beautiful Koi in a thick SeaSalt and egg crust and bake it. At the dinner table, they take a chisel and break the crust off to reveal the brilliant snow white/blood red colors of the kohaku. This is the only variety of nishikigoi they consume this way. I worked at Oasis WaterGardens in Seattle. That pond was the highlight of this episode for me.
I'll hopefully go there next year. And…two great hats!! That needs to be merch! Missed you in Hochminh, just about 2 kilometers south were about a 1/4 mile stretch of all wood Carver's…..
